Description

A luxurious gratin that combines tender asparagus, rich ham, and creamy cheese, all enveloped in a golden crust.


Ingredients

  • 500 g d’asperges (fresh asparagus)
  • 200 g de jambon sec (thinly sliced prosciutto or country ham)
  • 150 g de fromage râpé (Gruyère cheese)
  • 200 ml de crème fraîche (or heavy cream)
  • 2 œufs
  • Sel et poivre au goût
  • Beurre pour le plat (butter for baking dish)

Instructions

  1. Preheat your oven to 180°C.
  2. Boil the asparagus in boiling water for about 5 minutes, then drain.
  3. Butter a baking dish generously.
  4. Arrange the asparagus and ham slices in the dish.
  5. Whisk the eggs with the crème fraîche, salt, and pepper in a bowl.
  6. Pour this mixture over the asparagus and ham.
  7. Sprinkle the grated cheese on top.
  8. Bake for 25 to 30 minutes, until the top is golden and crispy.
  9. Serve hot.

Notes

Make-ahead by assembling the gratin a day prior and refrigerating it. Add herbs like thyme or chives for extra flavor.
