A refreshing sorbet combining the vibrant flavors of kiwi and the refreshing essence of mint, perfect for hot summer days.
Ingredients

- 4 kiwis, peeled and chopped
- 1/2 cup sugar
- 1 cup water
- 1/4 cup fresh mint leaves
- Juice of 1 lemon
Instructions
- Prepare the kiwis by peeling and chopping them into pieces.
- Mix the water and sugar in a saucepan and bring to a boil, stirring until sugar is dissolved.
- Add the kiwi pieces and lemon juice to the syrup and simmer for 5 minutes.
- Incorporate the fresh mint leaves and let the mixture cool at room temperature.
- Blend the mixture until smooth using a blender.
- Freeze the mixture in an airtight container for at least 4 hours.
- Serve with a scoop using an ice cream scooper, garnished with mint leaves.
Notes
For a creamier texture, consider adding a touch of coconut cream. Adjust sweetness to taste before freezing.
