- 1 whole chicken, cut into pieces
- 2 medium onions, sliced
- 2 cloves garlic, minced
- 1 preserved lemon, cut into wedges
- 3 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon ground ginger
- 1 teaspoon paprika
- 1/2 teaspoon saffron
- Salt and pepper to taste
- 1 bunch fresh cilantro
- Water as needed
- Homemade bread or couscous for serving
Instructions
- Heat the olive oil in a large tajine or Dutch oven over medium heat. Add onions and garlic, and sauté until fragrant and golden.
- Add the chicken pieces and lightly sear on all sides until golden-brown.
- Sprinkle in the cumin, ginger, paprika, saffron, salt, and pepper; stir to coat the chicken evenly.
- Incorporate the preserved lemon wedges and add enough water to cover the chicken.
- Reduce the heat, cover, and simmer gently for about 90 minutes until the chicken is tender.
- Sprinkle fresh cilantro before serving. Enjoy with warm bread or couscous to soak up the delicious sauce!
Notes
For enhanced flavor, marinate chicken in spices for a few hours before cooking. This dish tastes even better the next day.
